Great with tea or for breakfast, this cake is amazingly light and airy. You can slice it in small slivers and serve it at a tea party or at a bed and breakfast – this dessert is quick to please. Another gem from the Silver Spoon Cookbook. Try it!
Sweet butter, for greasing
1/2 cup dark brown sugar; plus extra for sprinkling
1 3/4 cups of ricotta
zest of 1/2 a lemon
5 tbsp olive oil
3/4 cup milk
2 1/4 cups flour
1 tbsp baking powder
Preheat the oven to 350 degrees. Grease a cake pan or spring form pan with butter and lightly dust with flour. Whisk together the eggs and sugar in a bowl until pale and fluffy. Stir in the ricotta, lemon zest, oil, and milk. Sift in the flour and baking powder, mix well and pour into the prepared pan. Sprinkle with extra sugar and bake for about 40 minutes or until a toothpick comes out clean. Cool, slice and serve!
last weekend we stayed at a Bed and Breakfast for our 6 month anniversary + daves last weekend to relax before work.I wasn’t sure where to go because we’re not from Florida and the beach is about 2 hours away from us. Dave found The White Orchid – a bed and breakfast right on the water. Flagler beach turned out to be so quiet and private feeling, it was really beautiful.
The White Orchid is owned by a really nice family, you walk in and you feel so comfortable. It has a very modern/beach house feel. They have an entire Spa in the back of their inn, and a separate room called “The Flamingo Room” that is attached to the spa, giving a more intimate feel. The Flamingo Room also rests across from the Mineral Pool, so its like having your own pool! They have a regular pool and a mineral pool, bikes to ride, beach chairs and umbrellas to use, a full spa, appetizers from 3-5 and a complimentary glass of wine. Not to mention the rooms are gorgeous and they can accomodate you with whatever you need. We went to dinner at BLUE – this restaurant on the water. They offered so much food that by the time our meals came we were full! but it was amazing. We’re actually pretty impressed by the food in Florida. Anyway, The morning breakfast was really delicious, we sat right facing the water and were offered fresh juice, coffee, omelettes, quiche, pancakes, english muffins, yogurt, fruit, or eggs any way. We spent the afternoon at the beach, practically alone because no one was around us. We hung out with the crabs coming out of their holes 🙂
There is only good things to say about this b+b, we had an amazing/relaxing time and would love to go back sometime soon. Dave started his residency today, he’s going to be a great doctor and surgeon. Here are some photos from The White Orchid.
