Oreo Stuffed Chocolate Chip Cookies

Oreo’s stuffed in a chocolate chip cookie? Everything about this sounds amazing. And they really are. One bite and its easy to fall in love. Crunchy on the outside but moist inside, decadent, and chocolatey. YUM! These are also so easy to make. You can actually get away with only having one per day since they are so big! One a day is definitely enough.. ok maybe two 🙂

PS I brought grandmother some of these and she called them pregnant cookies. I laughed way too hard at this!

Picky Palate’s Oreo Stuffed Chocolate Chip Cookies

Ingredients
2 sticks of butter, softened
3/4 cup brown sugar
1 cup granulated sugar
2 large eggs
1 tbsp vanilla extract
3 1/2 cups of all purpose flour
1 tsp salt
1 tsp baking soda
10 oz bag of milk chocolate chips
1 bag of Oreo cookies (she used double stuff)

Instructions
Preheat the oven to 350 degrees. In a mixer, cream softened butter and both sugars until well combined. Add in eggs and vanilla until well combined. In a separate bowl mix the flour, salt and baking soda. Slowly add to wet ingredients along with chocolate chips until just combined. Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo Cookie. Take another scoop of dough and place on bottom of Oreo Cookie. Seal the edges together by pressing and cupping in hand until Oreo Cookie is enclosed with dough. Place onto a cookie sheet with parchment paper and bake cookies 9-13 minutes or until cookies are golden brown. These things are HUGE! Enjoy!

Pignoli Cookies

These are SO good. They are light and airy but also so flavorful. If you make these – they will go SO quick you won’t have time to get one yourself! You’ll have to stash a few to the side for later 😉

Ingredients:
Two 8oz Jars of Almond Paste
4 Egg Whites
1.5 cups of sugar
Pine Nuts for decorating

Instructions:
Place the almond paste into a food processor and pulse until its granular in form. Transfer to a bowl, and gradually add in the sugar. Beat the egg whites until stiff peaks form and fold into the almond/sugar mixture. Mix until everything is uniform. Cover, and place in the refrigerator for about 30 minutes to rest.

Preheat the oven to 325 degrees. Place some parchment paper onto a baking sheet and create small half dollar sized cookie balls. These spread – so try to aim on the smaller side. Press pine nuts (amount to your liking) into each round ball to flatten a little. Bake for 10-12 minutes or until they are lightly golden in color.

Malted Milk Chocolate Chip Cookies

These are the best. Chewy and crispy, and some of the most ridiculously good cookies i’ve ever eaten…. please take my word for it and try these. They are SO EASY to make and baking them for 10-12 minutes is the secret key to their deliciousness. These are the flat cookie kind – but they have the chewy consistency so its just a win-win.

Pioneer Woman Malted Milk Chocolate Chip Cookies

Ingredients:

  • 1 cup (2 Sticks) Unsalted Butter Softened
  • 3/4 cups Golden Brown Sugar
  • 3/4 cups Sugar
  • 2 whole Eggs
  • 2 teaspoons Vanilla Extract
  • 2 cups All-purpose Flour
  • 1-1/4 teaspoon Baking Soda
  • 1-1/4 teaspoon Salt
  • 1/2 cup (rounded) Malted Milk Powder
  • 1 bag (12 Ounce) Milk Chocolate Chips

Instructions
Preheat oven to 375 degrees.

Cream butter, then add both sugars and cream until fluffy. Add eggs and beat slightly, then add vanilla and beat until combined. Add malted milk powder and beat until combined.

Sift together flour, baking soda, and salt. Add to butter mixture, beating gently until just combined. Its definitely going to be a tougher consistency so be ready for this and stir in the chocolate chips gently-

Add chocolate chips and stir in gently.

Drop by teaspoonfuls (or use a cookie scoop) and bake for 10 to 12 minutes. Bake less if you want chewy cookies; more if you want crispy cookies.
